I am one of those rare people that enjoys coffee and tea… depending on circumstances. Morning? Definitely coffee… helps jump start my day. Bedtime? A hot steamy cup of tea with a little honey… guaranteed to make me drowsy. Breakfast foods? Coffee. Looking at these cookies, I’d say… tea! This is one of my husband’s favorites from his childhood. I love to surprise him with a batch. The dough is great to work with and you don’t even have to refrigerate it before rolling them it in the sugar. This is also a great recipe for people want a little change from chocolate. I hope you enjoy them!

Honey Cookies

Cream:
¾ cup butter flavored shortening
1 cup sugar

Add:
¼ cup honey
1 beaten egg

Sift in:
2 ¼ cups flour
¼ teaspoon salt
1 ½ teaspoon cinnamon
1 ½ teaspoon baking soda
1 ½ teaspoon baking powder

Form into small balls and roll in sugar. (I use a small cookie scoop.)

Bake at 350° for 8 to 9 minutes.

Let cool on pan for 1 to 3 minutes before moving to cooling rack.

(For even better flavor I fill part of my ¾ measuring cup with real butter and then finish it off with shortening.)
