Cheese Quesadillas are the Mexican version of an American Grilled Cheese Sandwich. Although you can put many other things in a quesadilla, like grilled onions, peppers, and meat, traditional quesadillas are melted cheese between two tortillas, grilled to perfection. Sides, including sour cream, guacamole and salsa can be served with them for dipping. They are delicious, especially if made with homemade corn tortillas!
Cheese Quesadillas Ingredients – Makes 6 quesadillas
- 12 corn tortillas (check out our corn tortilla recipe)
- 2 cups (8 ounces) shredded Mexican style cheese blend
- vegetable oil for griddle
Cheese Quesadillas Supplies
- griddle or fry pan
- spatula
- pizza cutter or sharp knife
Cheese Quesadillas Sides (optional)
- sour cream
- guacamole
- salsa
Cheese Quesadillas Directions
Gather together cheese and corn or flour tortillas. Check out our recipe for corn tortillas.
Preheat griddle or fry pan on medium high heat. Spread a small amount of vegetable oil on the surface of the griddle.
Place a tortilla on the griddle. Add about 1/4 cup shredded cheese on the tortilla.
Cover with a second tortilla. Cook on one side until the cheese just begins to melt. Turn it over and continue cooking until cheese is melted. Remove from heat. Keep warm while you finish making the rest of the quesadillas.
Using a sharp knife or pizza cutter, cut each quesadilla into 4 pieces.
Serve with sides for dipping and garnishing like sour cream, salsa, back olives, green onions, cilantro, etc.
