This Spinach Apple Salad Recipe is a perfect side dish to serve with the Bobotie Recipe and African Rice Recipe from South Africa. Serve with a delicious South African Melktert for dessert and have a truly delicious feast!
Ingredients for Spinach Apple Salad Recipe
- 1 10 ounce bag, fresh baby spinach
- 1 granny smith apple, thinly sliced
- 1/4 cup brewed tea
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- juice from half a lemon
- 1/4 – 1/2 cup sliced almonds (optional, toasted)
Directions
If spinach has not been washed, break off hard stems and rinse in cold water. Drain, then spread over clean towel or paper towels to remove more water.
Peel and core apple. Slice into thin pieces.
If you want your almonds toasted, place 1/2 teaspoon butter in a fry pan. Add almonds and toast until they are golden brown. Allow to cool.
To make the salad dressing, thoroughly mix tea, honey, mustard and lemon juice together.
Place spinach in a serving bowl. Add apples and almonds and toss.
Drizzle dressing over salad and toss again, coating all the spinach. Serve immediately.
