Many of the Swedish meals included pickled items. This Swedish Cucumber Pickles Recipe is a perfect side dish for Swedish Meatballs or other hearty main dishes!
Swedish Cucumber Pickles Recipe Ingredients – Serves 6 as side
- 2 thin cucumbers
- 1 teaspoon salt
- 1/4 cup white vinegar
- 2 teaspoons fresh dill, chopped

Slice the cucumbers thin. We used the thinnest blade on our food processor.
Layer the cucumbers in a bowl sprinkling with the salt between layers. Cover and store in the refrigerator for at least an hour. You can even store them overnight.
Drain the cucumbers to get rid of any liquid. Do not rinse.
Place the cucumbers in a serving bowl and pour the vinegar over them. Coarsely chop or snip fresh dill. Add to cucumbers and toss.
Serving Suggestions: Swedish Meatballs and Gravy, mashed potatoes and a red cabbage salad.
