Many of the Swedish meals included pickled items. This Swedish Red Cabbage Recipe is a perfect side dish for Swedish Meatballs or other hearty main dishes!
Swedish Red Cabbage Recipe Ingredients – Serves 6
- 2 red onions, diced (we used white, red would definitely have been better!)
- 2 pounds red cabbage
- 2 Granny Smith or other baking apples
- 2 tablespoons butter
- 1/2 cup red wine
- 5 tablespoons brown sugar
- 2 tablespoons vinegar
- 1 teaspoon caraway seeds
- 1/2 teaspoon allspice
- 1/2 teaspoon ground cloves
- 2 teaspoons salt
- 1/2 teaspoon black pepper
Swedish Red Cabbage Recipe Directions
Remove outer leaves from cabbage. Cut in quarters and remove hard inner core. Cut cabbage into thin slices.
Peel and core apples. Dice apple.
Remove skin from onions. Chop. Brown in butter over medium heat for several minutes. Onions should just begin to get translucent but not browned. Add diced apples and cook for about 3 minutes more.
Add cabbage to the onions and apples. Mix. Cover and cook for about 10 minutes or just until the cabbage begins to wilt.
Mix wine, vinegar, sugar and spices in a small bowl.
Pour over cabbage mixture on stove and mix. Replace lid and cook for another 10 – 15 minutes. Just until the cabbage is tender but not overly soft. FYI: we overcooked our cabbage. It was still delicious but if it wasn’t overcooked it would have held its color better.
Serving Suggestions: Serve with Swedish Meatballs and gravy, Swedish Cucumber Pickles and mashed potatoes.
